What is a “raw bar”

Raw bars are fruit and nut bars that don’t need to be baked or cooked. We used cashews, prunes and coca to make these grain-free and gluten-free energy bars.

How to make a raw bar

It’s easy to make raw bars – and much more affordable than buying store bought brands! Simply add all the ingredients to a food processor and blend until they’re broken down into similar sized pieces. Press the mixture into a pan lined with parchment paper. Then, slice into 8 bars!

Power Pairing: Cashews + Prunes

Cashews are an excellent source of protein, along with important minerals like iron and zinc. Prunes provide fiber and can help promote bone health, gut health and heart health!

These bars aren’t just good for you, they taste great, too! Prunes intensify the flavor of the cocoa, while cashews add creamy, buttery notes to the bars.

Ingredients
 
 

  • 1 ½ cups California prunes
  • 1 cup raw cashews
  • ¼ cup cashew butter
  • ¼ cup dark chocolate chips
  • ½ TBSP cocoa powder
  • ½ tsp coarse kosher salt

Instructions
 

  • Combine the California prunes and cashews in the bowl of a food processor fitted with the “S” blade. Pulse 8-10 times until the prunes and cashews are broken down into similar size pieces. Add the cashew butter, dark chocolate chips, cocoa powder, and salt to the food processor then [process until everything is uniform in size and is starting to bind together.
  • The mixture can be rolled into 16 two-bite balls at this point or formed into a small square and sliced into 8 equal-sized bars.
