Super Pink Smoothie

This fun, bright super pink smoothie by Alison Needham is loaded with sweet-tart raspberries and strawberries. California Prunes add a touch of sweetness, plus vitamin K, potassium, fiber, and antioxidants! It’s a nutritious smoothie the whole family will love!

Servings: 2
Prep Time:

Ingredients

  • 1 cup vanilla yogurt
  • 1 cup frozen raspberries
  • 1 cup frozen strawberries
  • 1 banana, peeled and broken into chunks
  • 6 California Prunes
  • 1 tablespoon beet juice powder, optional
  • 1 teaspoon vanilla extract

Directions

Add all ingredients to blender, close lid, and pulse until smooth. If a thicker smoothie is desired, add up to one cup of crushed ice and blend again until smooth. Pour into two glasses and garnish with fresh raspberries and a sprig of mint if desired. Serve immediately!

Notes:

Beet juice powder adds a pop of extra color (and nutrition), but if you can find it or don’t have any on hand, it’s equally delicious without it.
