Chewy Oatmeal Cookies with Chocolate Chips and Prunes
Chewy oatmeal cookies loaded with dark chocolate, chopped prunes and a touch of honey We can’t think of a better treat, thanks. Or a better breakfast, frankly.
This riff on our Chewy Oatmeal Chocolate Chip Cookies is inspired by one of our growers, Matt Bozzo, who swaps the puree for chopped prunes, and uses dark honey from his own hives to give these an even richer flavor.
For a little crunch, you can also add in 1/2 cup of chopped walnuts (Matt grows those too) to make next-level chewy oatmeal cookies!
Ingredients
- 1 cup unsalted butter, softened
- ⅓ cup sugar
- ¼ cup dark honey
- 1 egg
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- ½ tsp baking soda
- ¼ tsp kosher salt
- 1 ½ cups rolled oats
- ½ cup (about 12) pitted California prunes, chopped
- ⅓ cup dark chocolate chips or chunks
Directions
Preheat the oven to 350°F. Line two baking sheets with parchment paper or silicone silpats.
Add the butter and sugar to the bowl of a stand mixer. Using the paddle attachment on medium speed, cream the butter until the sugar has been absorbed and the texture is light and fluffy. Add in the honey, egg, and vanilla, and continue mixing on low speed until incorporated, scraping down the sides of the bowl and paddle.
In a small bowl, whisk together the flour, baking soda, and salt. Gently fold the dry mix, then the oats, into the mixer bowl, mixing on low just enough to incorporate everything evenly. Use a spatula to fold in the chopped prunes and chocolate chips.
With an ice cream scoop, large spoon, or just your hands, form the dough into balls about 1-inch in diameter, and arrange on the prepared baking sheets. Press the dough down to create a more evenly textured cookie, or leave them as balls for a cookie that’s chewier in the center and a little crisp on the edges. Bake for 8-10 minutes, until cooked throughout and starting to brown!
PRO TIP: Keep an eye on your cookies in the last couple minutes of baking time – especially if you want chewy oatmeal cookies instead of crispy ones.
