California Prune Breakfast Oat Pudding
This Breakfast Oat Pudding recipe is easy on your tastebuds and your morning routine, thanks to simple, whole-food ingredients. Recipe developed by Leslie Bonci, MPH, RD, CSSD, LDN.
Ingredients
- ½ cup oats, dry
- 1 cup water
- ¼ cup California prunes, finely chopped
- 1 tablespoon almond butter
- ¼ tsp ground ginger
- 1/8 tsp grated orange peel
- 1/2 cup vanilla non-fat Greek yogurt
- 1 teaspoon maple syrup
- 1 tablespoon sliced almonds
Directions
Mix oats, water, ginger and 3 TBSP of the prunes together. Microwave on HIGH for 2 minutes. Remove from microwave. Stir in the almond butter, Greek yogurt, maple syrup and orange peel and blend well. Top with the remaining prunes and sliced almonds.
