Ingredients
 
 

  • 12 pitted California Prunes about 120 g
  • 4 graham cracker sheets about 90 g
  • ¾ to 1 cup marshmallow fluff about 90 to 120 g
  • 4 tablespoons dark chocolate chips or chopped dark chocolate about 45 g

Instructions
 

  • Flatten the prunes. Place 3 California Prunes close together on a sheet of parchment paper, slightly overlapping. Fold the parchment over them and gently press with the bottom of a sturdy glass or flat-bottomed measuring cup until the prunes flatten into a cluster. Repeat with the remaining prunes to make 4 clusters total. Use a spatula to transfer each cluster to a clean sheet of parchment.
  • Prepare the graham crackers. Line a small sheet pan with parchment paper. Break each graham cracker sheet in half and arrange 4 halves on the prepared pan.
  • Layer the s’mores. Place one flattened prune cluster on each graham cracker half. Divide the marshmallow fluff evenly among them. Use about ¾ cup total for a neater s’more or the full cup for a more generous layer.
  • Melt the chocolate. Place the chocolate in a heatproof bowl and microwave in 30-second intervals, stirring between each interval, until just melted. This should take less than 1 minute total. Stop heating as soon as the chocolate is smooth and fluid.
  • Add the chocolate. Spoon the melted chocolate over the marshmallow and prune layers, dividing it evenly among the 4 s’mores.
  • Finish with graham crackers. Break the remaining 4 graham cracker halves into rough pieces and scatter them over the top.
  • Chill and serve. Refrigerate for about 10 minutes, or until the chocolate is just set. Serve while the marshmallow is still soft.

Notes

Storage
Store Prune S’mores in an airtight container in the refrigerator for up to 2 days. The graham crackers will soften over time.
