But did you know that they can add moisture and depth of flavor to your favorite baked goods? And that’s not all…with the addition of prune purée, bakers can reduce refined sugar by up to one-third, as well as reducing the amount of needed eggs and fats. Whether you are trying to reduce refined sugar, cut unhealthy fats, or simply make healthier baked goods, California Prunes and Prune Purée are ingredients more and more bakers are relying on to enhance their cakes, cookies, muffins, and more.

We adore these citrus and prune cupcakes. However, if you’ve got picky kids that only eat chocolate or vanilla (or whatever the flavor of the day happens to be), you can easily create cupcakes using your favorite cake batter. Just pour the batter into a cupcake tin until it’s 3/4 of the way full. Then bake for 12-15 minutes at 350F (180C) or until a toothpick comes out clean.

Halloween Cupcakes

Citrus meets sweet in this delightful Prune and Orange Halloween Cupcake recipe. These festive cupcakes make a particularly boo-tiful dessert when dressed up with Halloween-themed frosting.

Ingredients
 
 

  • 70 g California Prunes finely chopped
  • 8 TBSP unsalted butter room temperature
  • 90 g caster sugar
  • 125 g self-rising flour
  • 2 large eggs beaten
  • Zest from 2 oranges

Instructions
 

  • Pre-heat oven to 350F (180°C).
  • Cream together the butter and sugar.  Add the beaten egg and combine until light and fluffy.
  • Stir in the flour, orange zest and chopped California Prunes and mix together.
  • Place the cupcake cases in the muffin tray and divide the mixture evenly.
  • Bake in the pre-heated oven for 12-15 minutes until cooked.
  • Place on a wire rack and allow to cool completely before decorating with either homemade or store-bought icing, fondant or frosting.

Notes

We styled these cupcakes for Halloween, but these irresistible orange and prune cupcakes are a delicious treat any time of year!
