Flatbread Pizza with Goat Cheese, Prosciutto & Prunes

If you’ve got ten minutes, you can make our delicious goat cheese and prosciutto flatbread pizza. It’s as easy to make as it is enjoy.

Wait…it only takes ten minutes???

We used store bought flatbread – which means you just need to add your toppings and give it a quick broil. Of course, if you feel the need to get all fancy and make your own homemade flatbread, then you do you. We promise it’s delicious either way.

Switch things up

We think this recipe is fabulous as is but if you’re in a pinch, there are a few swaps you can make. If you can’t find flatbread at your local grocer (or in your freezer for that matter), naan bread or pizza crust are great alternatives. No prosciutto on hand? Bacon works too.

Flatbread Pizza with Creamy Goat Cheese, Crispy Prosciutto & Balsamic Glazed Prunes

This goat cheese and prosciutto flatbread pizza is sure to hit the spot. With only ten minutes of prep time, it's as easy to make as it is enjoy.

Ingredients
 
 

  • 10 California Prunes diced small
  • 2 TBSP balsamic vinegar
  • 6 slices prosciutto
  • 4 personal sized flatbreads
  • 8 TBSP creamy goat cheese
  • 8-12 fresh basil leaves
  • flaky sea salt and coarse ground black pepper to taste

Instructions
 

  • Preheat oven to broil and line a baking sheet with foil.
  • In a small bowl toss together the prunes and balsamic vinegar. Set aside.
  • Place the prosciutto on the prepared baking sheet and broil until crispy, about 4-5 minutes. Set aside.
  • Toast the flatbreads in the oven, under the broiler on a pan or directly on the rack for 5 minutes, flipping halfway through.
  • To assemble, spread the goat cheese over the toasted flatbreads, layer on the balsamic glazed prunes, then top with large pieces of crispy prosciutto, and a sprinkling of fresh basil leaves. Season to taste with salt and pepper and enjoy!
