Introducing the Finely Pruned Pear Cocktail, courtesy of our friends at Hawks Public House. This lovely lemon, pear and prune concoction is sure to become a new favorite. It calls for a little advance prep to create the Lemon Cordial and Pear Prune Shrub, but we promise it’s well worth it. Cheers!
How to Make a Finely Pruned Pear Cocktail
This lovely libation is delicious and refreshing – and well worth the advance work. The Prune Pear Shrub and Lemon Cordial both add distinct flavors that really make this pear cocktail shine, so don’t get discouraged by the fact that you need to make the shrub a few days in advance.
How to make a Prune Pear Shrub
Making the actual Prune Pear Shrub is easy. The waiting is the hardest part. Simply cover your prunes and a pear in sugar. Let them sit for 2 days in the fridge. After two days, collect the delicious liquids from your mixture, and mix with equal parts apple cider vinegar.
Bonus: Prune Pear Shrub is also used in the Fractured Prune Cocktail!
How to make a Lemon Cordial
Lemon Cordial is basically a lemon simple syrup with some added lemon juice. Bring water and lemon peels to a boil. Add sugar, let the mixture cool, and add a final shot of lemon juice. Easy, right?

For the Finely Pruned Cocktail:
- 2 ounces California Prune Pear Shrub recipe to follow
- 1 ounce Lemon Cordial recipe to follow
- 3/4 ounce lime juice
- 2 dashes of non-alcoholic Fee Bros orange bitters
For the Lemon Cordial:
- 10 lemons peeled
- 1 cup water
- 2 cups sugar
- 1/4 cup lemon juice
For the Prune Pear Shrub:
- 1 California Prune chopped
- 1 Bartlett Pear chopped, seeds discarded
- 1 cup sugar
- apple cider vinegar
Instructions
For the Finely Pruned Cocktail:
- Shake the ingredients with 2 sprigs of thyme and 1 sprig of rosemary. Strain into a wine glass with ice. Garnish with herbs of choice and dried lemon and lime wheels
For the Lemon Cordial:
- Bring the water to a simmer, add the lemon peels, set aside to cool. Once it’s cool, strain the water off and add the sugar, bring back to a simmer to dissolve the sugar. Cool the mixture down and stir in the lemon juice.
For the Prune Pear Shrub:
- Cover the prunes and pears with the sugar and place in the refrigerator for 2 days. Take the accumulated liquid and add equal parts apple cider vinegar.
To make the Finely Pruned Cocktail:
- Add 2 ounces (60 ml) of Prune Pear Shrub, 1 ounce (30 ml) of Lemon Cordial, 3/4 ounces (20 ml) of lime juice and a dash of orange bitters. Enjoy!
