What is Molé?

Molé is a traditional Mexican sauce and marinade.

Fun fact: the word molé (originally molli) means sauce in Nahuatl, the language used by the Aztecs.

What is this sauce made of?

There are many variations on molé, but most contain chiles, tomatoes, dried fruits and spices.

What does Molé taste like?

This traditional sauce is often described as earthy and smoky, with a subtle dose of heat.

How is Molé sauce used?

Molé sauce pairs beautifully with most proteins. Try it with grilled chicken, pork, beef, or even spooned on top of eggs. It’s also delicious in burritos, enchiladas and tacos.

Ingredients
 
 

  • 1 TBSP olive oil
  • 1/2 cup chopped yellow onion
  • 1 clove garlic minced
  • 15 ounces diced fire roasted tomatoes not drained
  • 1 TBSP diced green chilies canned
  • 12 California prunes halved
  • 1 TBSP unsweetened cocoa powder
  • 1/4 tsp cinnamon
  • Dash of cloves
  • Dash of cumin
  • 2 TBSP orange juice
  • 1/2 tsp salt or to taste
  • 1/4 tsp chipotle powder
  • Sesame seeds for garnish

Instructions
 

  • Sauté onion and garlic in oil until golden brown then add tomatoes, diced green chilies, prunes, orange juice, cocoa powder and spices.
  • Cook on medium heat for 4-5 minutes.
  • Transfer to a blender or food processor and puree until smooth.
  • Garnish with sesame seeds. Serve over chicken, pork, turkey or tofu.

Notes

Molé adds the perfect flavor boost to meats, and is also a welcome addition to burritos and enchiladas!
