Ingredients
 
 

  • 1 cup old fashioned or gluten-free oats
  • 2/3 cup toasted unsweetened shredded coconut
  • 1/2 cup creamy natural nut butter of choice peanut butter and almond butter are both great
  • 1/2 cup pecan meal
  • 1/2 cup prune puree
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract

Instructions
 

  • In a mixing bowl, stir all of the ingredients together until completely combined.
  • Cover and chill in the refrigerator for 30 minutes. Once chilled, use a small cookie scoop or a measuring spoon to measure equal-sized amounts of the mixture, then form into balls by applying gentle pressure to the dough with the palms of your hands. Do not try to roll these energy balls as they will break apart.

Notes

Store covered in an air-tight container in the refrigerator for up to 1 week.
An equal amount of any type of nut meal can replace the pecan meal called for in the recipe. Both almond and hazelnut meal are delicious choices.
If the mixture seems too wet once chilled add extra oats. This can happen if the natural peanut butter used is really oily.
