S’mores Chocolate Banana Bread
You’ve probably tried chocolate chip banana bread. It’s delicious, right? This incredible recipe from Rachel Dunston takes it to the next level by adding rich dark cocoa powder, marshmallows, chocolate chunks and graham cracker pieces to the batter. She says it gives it the banana bread “a yummy chocolate sandwich cookie vibe”.

What’s the final touch to that puts this decadent dark chocolate banana bread over the top? After baking the bread, Rachel adds more chocolate chunks, marshmallows and graham cracker pieces onto the top of her finished loaf. If you’ve got a kitchen torch, now’s your chance to fire it up and get the topping all gooey and golden. If you don’t have a kitchen torch, simply broil the loaf in the oven for a few minutes.
A healthy twist
Rachel is known for her decadent treats, but as a mother of two, she doesn’t miss an opportunity to add a little extra fiber and fruit into her craveworthy confections. One of Rachel’s favorite tricks is to use prune purée in place of vegetable oil or eggs. She particularly loves this healthy swap in rich, chocolate recipes.

S’mores Chocolate Banana Bread
Rachel DunstonIngredients
- 1 ½ cups all-purpose flour
- ½ cup unsweetened dark cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 eggs
- 1 ½ cups mashed bananas about 3
- ½ cup granulated sugar
- ½ cup packed brown sugar
- ½ cup prune puree
- 1/2 cup chopped pitted prunes
- 1 tsp vanilla
- 1 cup milk chocolate chips
- 1 cup graham cracker cereal
- 1 cup mini marshmallows
Instructions
- Preheat oven to 350°F (180C). Spray a loaf pan with a flour based baking spray.
- In a large mixing bowl sift together flour, cocoa powder, baking soda and powder. Whisk in salt.
- Prepare prune puree.
- Mash bananas.
- In a standing mixer whip together mashed bananas, brown sugar, white sugar and prune puree. Add in vanilla.
- Slowly add dry ingredients to the wet ingredients in the standing mixer until just combined. Don’t over mix.
- Add in chopped prunes, chocolate chips, cereal or crushed graham cracker and marshmallows until just incorporated.
- Bake for 1 hour. Cover with foil and bake an additional 10 min if necessary or until a toothpick inserted in the middle comes out clean.
- Let cool on a rack.
- Top with extra marshmallows, chocolate candy bar pieces and graham cracker cereal or crumbs. Toast for briefly in the over or with a torch and enjoy.
