You’ve probably heard of Devils on Horseback, where prunes are stuffed with cheese and wrapped with bacon, then popped in the oven. This recipe uses the same idea: the sweet-salty-creamy pairing just sits on a cracker here, and gets a fresh herb garnish. If a blue cheese appetizer isn’t your style or you want to make a variation, swap the blue cheese for creamy goat cheese or even cream cheese.

These easy bites can be simply arranged on a tray, or add them to a charcuterie display or cheese board. Serve them warm or at room temperature. You can skip the rosemary if you aren’t a fan, or swap in parsley or fresh thyme too. The blue cheese benefits from a bit of freshness.
Simple Prosciutto, Prune + Blue Cheese Appetizers
Rachel DunstonIngredients
- 12 California prunes
- 2 ounces prosciutto cut into thin strips
- 12 crackers
- 3 ounces blue cheese
- 2 sprigs rosemary optional
Instructions
- Preheat the oven to 350F (180C)
- Wrap the strips of prosciutto around the prunes, and place them on a baking tray lined with parchment paper. Bake for 5-6 minutes. (This step is optional, but really makes a big difference!)
- While the prunes are baking, divide the blue cheese evenly among the crackers.
- When the prunes are finished baking, top each cracker and cheese with a warm prosciutto wrapped prune.
- Top each prune with a little rosemary, and serve.
