These Smashed Prune Snickers Bites have everything you love about a Snickers Bar, but this homemade version is made with better-for-you ingredients. Naturally sweet California Prunes serve as the chewy base, bringing caramel-like notes beneath a layer of creamy peanut butter and a coating of melted dark chocolate. Finished with crushed peanuts and a sprinkle of flaky sea salt, these delicious bites are easy to make and offer a satisfying alternative to the original candy bar.

Ingredients
 
 

  • 12 California Prunes
  • 1/4 cup peanut butter
  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • 2 tablespoons peanuts roughly chopped
  • Flaky sea salt to taste

Instructions
 

  • Combine the chocolate chips and coconut oil in a microwave-safe bowl. Heat in 20-second increments, stirring well between each interval, until the chocolate is melted and smooth.
  • Evenly space the prunes on a parchment-lined baking sheet. Top with a second sheet of parchment paper.
  • Using the bottom of a heavy cup, smash the prunes between the parchment sheets until each round is about 2 inches in diameter and 1/4 inch thick.
  • Top each smashed prune with about 1 teaspoon of peanut butter.
  • Pour or spoon the melted chocolate evenly over the top of each prune. Allow the chocolate to firm up slightly, then sprinkle with the chopped peanuts and flaky sea salt.
  • Transfer the baking sheet to the refrigerator or freezer and chill for at least 1 hour, or until the chocolate is fully set.
  • Serve chilled as a satisfying snack, pre-workout bite, or dessert.

Notes

Storage
Once the chocolate has firmed up, the bites can be stacked and stored in an airtight container or freezer bag.
Store in the refrigerator for up to 1 week or in the freezer for up to 2 months.
Notes
The bites will be firm with a snappy chocolate shell, while the prune base will remain slightly chewy.
If you prefer a softer texture, let the bites sit at room temperature for a few minutes before eating.
