This Sweet + Spicy Cheese Toast takes classic comfort food to bold new heights! Ingredients
 
 

To make the Whipped Feta Spread:

  • 1 medium clove garlic
  • 8 ounces feta cheese
  • ¾ cup full-fat Greek yogurt
  • ¼ tsp ground black pepper

To make the Sweet and Spicy Cheese Toast:

  • 4 slices of rustic bread sliced thick
  • 2 TBSP unsalted butter
  • 8 TBSP prepared Whipped Feta Spread
  • 1 cup shredded sharp cheddar cheese
  • 1 jalapeno thinly sliced
  • cup sliced California Prunes
  • 2 slices cooked bacon optional, chopped

Instructions
 

To make the Whipped Feta Spread:

  • In a food processor or blender jar pulse the garlic clove until minced. Add the feta cheese, Greek yogurt, and black pepper. Blend or process until very smooth, scraping down the sides as necessary.
  • This spread can be made in advance and stored in an airtight container in the refrigerator for up to five days. The spread will thicken up a bit after being stored in the fridge, but will still be a spreadable consistency.

To make the Sweet and Spicy Cheese Toast:

  • Preheat the broiler to high and line a quarter sheet pan with aluminum foil, set aside.
  • Butter one side of each of the pieces of bread. Place buttered side up on the prepared sheet pan. Toast under the broiler until the edges are turning golden brown, about 1 ½ - 2 minutes.
  • Carefully spread 2 TBSP of the Whipped Feta Spread onto each piece of toasted bread. Place the pan back under the broiler for an additional 1 minute.
  • Top each of the pieces of toast with ¼ cup of the shredded sharp cheddar cheese, slices of jalapeno, sliced prunes, and chopped bacon if using. Broil for an additional 3-4 minutes watching carefully until the cheddar cheese has melted and is starting to brown and the peppers are fragrant. Serve immediately.
