Norwegian Sweet Soup (Søt Suppe)

This cozy, old-world Norwegian Sweet Soup, also known as Søt Suppe, is a naturally sweet, gently spiced fruit soup traditionally served around the holidays, but delicious any time of year. Made with California Prunes, apricots, raisins, citrus, and a touch of cinnamon, it’s a comforting, heritage-rich dish that doubles as both dessert and breakfast. The prunes bring deep caramel notes and natural sweetness. Best served chilled or at room temperature, it thickens as it sits, making it perfect for make-ahead moments or sharing with family and friends.

Ingredients
 
 

  • 2 cups dried California Prunes soaked overnight in boiling water
  • 2 cups dried apricots soaked several hours in boiling water
  • 1 cup dark raisins
  • 1 cup golden raisins
  • 1 orange peeled and quartered (save the peel!), slice fruit into 1/2 inch pieces. Slice peel into thin strips (you'll need 1 tablespoon)
  • 1 lemon peeled, prep same as orange
  • 1 cinnamon stick
  • ¼ cup sugar or honey to taste
  • ¼ cup pearl or quick-cooking tapioca

Instructions
 

  • Combine the soaked prunes and apricots (with their soaking water) in a large pot.
  • Add the raisins, sliced citrus, orange and lemon peels, and cinnamon stick.
  • Add more water as needed to fully cover the fruit.
  • Simmer gently for about 1 hour, or until the fruit is tender. Don’t overcook—you want the fruit to hold its shape.
  • Soak the tapioca briefly in water (5–10 minutes), then stir into the fruit mixture along with the sugar or honey.
  • Simmer until slightly thickened. It will thicken more as it cools—you can always adjust with a splash of water later.
  • Serve at room temperature or chilled.
  • Optional: Top with plain Greek yogurt, whipped cream, or a sprig of fresh mint for extra flair.
