These no-bake Chocolate Prune Balls are the ultimate healthy chocolate snack. Naturally sweetened with California Prunes, rich in cocoa, and boosted with fiber and nutrients, they’re the perfect guilt-free indulgence for snackers who want the best of both worlds: flavor and function. Makes 24.
½cupunsweetened shredded coconutplus more for rolling
2TBSPcocoa powder
1TBSPhoney or maple syrupoptional
½tspvanilla extract
Pinchof sea salt
1–2 tablespoons wateras needed
For Decorating
2/3cupchocolate chips
1/2TBSP vegetable oil
sprinklesoptional
Instructions
Toast the nuts (if not already toasted) in a dry skillet for 3–5 minutes over medium heat, until fragrant. Let cool.
Combine prunes, nuts, coconut, cocoa, sweetener, vanilla, and salt in a food processor.
Pulse until sticky and cohesive. Add 1 tablespoon of water if too dry; pulse again. Repeat if needed.
Roll into 1-inch balls using your hands or a small scoop.
Chill in the fridge for 1 hour before decorating to firm up — or enjoy right away!
If you are decorating, after 1 hour, melt 2/3 cup chocolate chips in the microwave. Add 1 1/2 tbsp vegetable oil into melted chocolate in order to make it smoother and shinier.
Dip each ball into chocolate and sprinkle with your favorite dessert decorations. Place them on the baking tray lined with parchment paper and let them cool down in the fridge for about an hour.
Keep in an airtight container in the fridge for up to 4 days.
