Ingredients
 
 

Oats:

  • ½ cup rolled oats
  • 2/3 cups almond milk
  • 1 TBSP chia seeds
  • 1 scoop vanilla protein powder
  • 2 tsp maple syrup

Topping:

  • ¼ cup Greek yogurt
  • 1 TBSP cacao nibs

Mousse:

  • 2 California Prunes
  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup
  • 1-2 tbsp water

Instructions
 

Make the oats.

  • Combine all ingredients. Then refrigerate 2 hours to overnight to set.

Make the mousse.

  • Place ingredients in a small blender and blend together until smooth, adding 1-2 TBSP water till desired texture is reached.
  • When ready to eat, layer oats with Greek yogurt, followed by the chocolate mousse. Top with cacao nibs and enjoy!
