We can never get enough variations of baked feta. It’s the perfect easy appetizer and so incredibly versatile. This version calls for California Prunes, fresh herbs, honey and salty roasted pistachios.
2TBSPchopped mixed fresh herbsthyme, rosemary, and mint
½tspchili flakes
⅓cupextra virgin olive oil
Salt and pepper to taste

¼cupsalted, roasted pistachioschopped
Instructions
Preheat oven to 350°F (180C).
Place the block of feta in a round or square baking dish (at least 6 inches/ 15 cm).
Sprinkle the prunes over the feta, followed by the thyme, rosemary, mint, and chili flakes.
Drizzle with the olive oil, and sprinkle with salt and pepper. Place into the oven and bake for 25 minutes, followed by 2 minutes under the broiler or until golden and bubbling.
Top with pistachios and drizzle with honey. Serve immediately with crostini or crackers.
