Ingredients

For the smoothie base:

  • 1 cup plain yogurt
  • 1 banana peeled and broken into chunks
  • 5 California Prunes
  • 1 TBSP ground flaxseeds
  • 1 TBSP honey

For the strawberry layers:

  • 1 cup frozen strawberries
  • 1 TBSP beet juice powder optional
  • 1 tsp vanilla extract

For the chocolate layers:

  • 1-2 TBSP dark cocoa powder
  • 1 cup ice

Instructions

  • Add all smoothie base ingredients to blender, close lid and pulse until smooth. Pour out half of smoothie base mixture into a pitcher or glass with at least a 1 cup (250ml) capacity.
  • To the remaining smoothie in the blender add the frozen strawberries, beet juice powder (if using), and vanilla extract. Pulse until smooth and pour into a second similar-sized pitcher or glass. Rinse the blender.
  • Pour the remaining smoothie base into the blender and add the cocoa powder and the ice. Pulse until smooth.
  • Pour a layer of chocolate smoothie into a glass. Top with a layer of strawberry smoothie, then chocolate smoothie, alternating until the glass is full. Garnish with a chocolate-covered strawberry, if desired.
  • Enjoy your chocolate strawberry smoothie creation!

Notes

To make chocolate covered strawberries, melt chocolate chips in a small bowl in the microwave on high for 1 minute. Stir until smooth. Dip dry strawberries in melted chocolate and refrigerate until chocolate is set.
To ensure clean smoothie layers, it’s important that the smoothies have a similar thickness. If they aren’t, you can always add more ice and blend, or alternately, you can freeze the glass after pouring in each layer for about 5-10 minutes. If you decide to freeze between layers, be sure you keep the chocolate and strawberry smoothie bases in the freezer as well. Stir smoothie bases well before pouring another layer into the serving glass.
