Halloween Cupcakes

Citrus meets sweet in this delightful Prune and Orange Halloween Cupcake recipe. These festive cupcakes make a particularly boo-tiful dessert when dressed up with Halloween-themed frosting.

Ingredients
 
 

  • 70 g California Prunes finely chopped
  • 8 TBSP unsalted butter room temperature
  • 90 g caster sugar
  • 125 g self-rising flour
  • 2 large eggs beaten
  • Zest from 2 oranges

Instructions
 

  • Pre-heat oven to 350F (180°C).
  • Cream together the butter and sugar.  Add the beaten egg and combine until light and fluffy.
  • Stir in the flour, orange zest and chopped California Prunes and mix together.
  • Place the cupcake cases in the muffin tray and divide the mixture evenly.
  • Bake in the pre-heated oven for 12-15 minutes until cooked.
  • Place on a wire rack and allow to cool completely before decorating with either homemade or store-bought icing, fondant or frosting.

Notes

We styled these cupcakes for Halloween, but these irresistible orange and prune cupcakes are a delicious treat any time of year!
