Ingredients

  • 12 California prunes
  • 2 ounces prosciutto cut into thin strips
  • 12 crackers
  • 3 ounces blue cheese
  • 2 sprigs rosemary optional

Instructions

  • Preheat the oven to 350F (180C)
  • Wrap the strips of prosciutto around the prunes, and place them on a baking tray lined with parchment paper. Bake for 5-6 minutes. (This step is optional, but really makes a big difference!)
  • While the prunes are baking, divide the blue cheese evenly among the crackers.
  • When the prunes are finished baking, top each cracker and cheese with a warm prosciutto wrapped prune.
  • Top each prune with a little rosemary, and serve.

Notes

Swap the rosemary for parsley or fresh thyme if desired.
Make it gluten-free by using gluten-free crackers and blue cheese.
