Roasted Baby Carrots with Prunes

Prunes and tender baby carrots team up in a vegetable dish that’s great with grilled pork chops, roast chicken, or braised beef.

Heat oven to 450°F. In small bowl, combine honey, lemon juice and thyme; set aside. On foil-lined baking sheet, toss carrots with oil, salt and pepper. Bake 20 to 25 minutes or until tender, stirring occasionally. Add honey mixture and Prunes; toss well. Bake an additional 1 to 2 minutes or until heated through.
