- 3 oz. Sparking Rose (Highwayman)
- 1/2 oz. prune syrup (recipe below)
- 1 oz Apero Americano
- Splash of Club Soda
- Infused prunes and orange for garnish
For the prune syrup: simmer 2 cups chopped prunes with, in 1 cup water and 1 cup sugar. Add 1 Tbs. white pepper corns, 3 cardamom pods and 4 cloves. Simmer for 30 minutes stirring occasionally. strain and cool.
Combine sparkling, prune syrup and Apero in an ice filled wine glass. Stir for 3 seconds. Top with Club soda.
